Blackberry Ombre Sparkler

1 cup fresh blackberries
1 cup sugar
1 cup water
4 sprigs fresh rosemary
1 bottle champagne
Instructions: In a small saucepan, combine blackberries, sugar and water. Bring to a boil on high heat and then reduce to a simmer and let cook for 12 ~ 15 minutes. The blackberries will become soft and bright in color and a pinkish purple syrup will form. Take off the heat and drain the blackberries, keeping the syrup in a separate bowl. Set both aside and allow to cool. Once blackberries and simple syrup are cooled, spoon about 4 tablespoons of syrup into the bottom of each champagne flute. Top with champagne. Garnish with fresh blackberries or the cooked blackberries and a spring of rosemary.
Chilled Coco Martini

1 packet hot cocoa mix
1 cup milk
3 oz. whipped cream flavored vodka
1 oz. Buttershots caramel liqueur
Instructions: Bring the milk to a simmer in a pot and whisk in the cocoa mix until fully incorporated. Refrigerate for about 10 – 15 minutes to chill. Add 1/2 cup of the prepared cocoa to a cocktail shaker along with the vodka and caramel liqueur. Fill with ice, shake well and pour into cocktail glasses. Garnish with either whipped cream or marshmallows.
Jack Frost
1 cup pineapple juice,
chilled 1/2 cup blue curacao
1/2 cup light rum
1/2 cup cream of coconut
4 slices pineapple
Instructions: In blender, combine ice, pineapple juice, blue curaçao, rum, and cream of coconut and blend until mixture is smooth. Pour into 4 glasses.
Black Bourbon Hot Chocolate
1½ cups Milk
5 tbsp Ghirardelli Double Chocolate Hot Chocolate Mix (Or mix of your choice)
2 oz. Red Stag Black Cherry Bourbon by Jim Beam
Whipped Cream (I like homemade)
Chocolate Shavings
Instructions: In a small saucepan, heat milk and hot chocolate mix over medium – high heat until it starts to steam (do not boil). Stir frequently. Pour 1 oz. of black cherry bourbon into each cup. Evenly divide hot chocolate between the two cups. Top with whipped cream and chocolate shavings.
Winter Sea Breeze

21 oz vodka (1/8 cup)
1 oz grapefruit juice (1/8 cup)
1/2 oz tonic syrup (2 tablespoons)
2 oz soda water (1/4 cup)
12 pomegranate seeds
3 mint leaves (for garnish)
Instructions: Fill your glass about 3/4 full with ice. A lowball glass is the perfect size. Add the vodka, grapefruit juice, tonic syrup and stir. Pour in the soda water and garnish with the pomegranate seeds and mint leaves.
